Did you know... How many saffron flowers yield a kilo of saffron spice?

The spice saffron is the dried stamen of the saffron crocus flower. Figures of production vary widely and probably so do yields; but apparently a pretty good average figure is a hundred and fifty thousand flowers to make one kilogram of dry saffron - that means about eighty thousand flowers for one pound of spice.

The flowers need to be hand picked one by one, and the stamens pinched out again by hand from each. A well trained professional saffron picker works about 25 days to produce 1 kilo of spice. No wonder saffron is the most expensive vegetable spice in the world.
